Zebra Cake

How German Mums Would Bake a Zebra Cake for Afternoon Tea ‘Kaffee und Kuchen’

From our favourite German baker “King of Cakes” comes this recipe for the Zebra cake:


  • 5 eggs
  • 250g sugar
  • 10g vanilla sugar
  • 250ml oil (Sunflower Oil or Canola Oil)
  • 125ml tepid water
  • 375g plain flour
  • 17g baking powder
  • 2 Tbsp cocoa powder


  1. Preheat the oven to180°C (fan forced 160°C, gas 3). Separate the eggs. Beat egg yolks, sugar and vanilla sugar until fluffy and light in color. Add tepid water and oil. Mix flour and baking powder and add gently to the mixture. Finally whisk the egg whites until stiff then gradually fold into the mixture.
  2. In order to get the “Zebra” look, you separate the dough into two parts. Then add the cocoa powder to one half. If the dough is too dry, simply add two more tablespoons of water. Grease your cake pan ( with a diameter of 24cm) with some margarine or butter. You start with placing 3 tablespoons of dark dough into the middle of your cake pan. On top of this you spoon 3 tablespoons of light dough. You continue alternating the dark and light dough until none is left. So this is how you get your unique Zebra pattern.
  3. Bake the Zebra cake for 50-60 minutes. You know it’s ready when you put a toothpick into the middle of the cake, pull it out and it comes out clean with no dough sticking to it. Let the cake cool down first before removing from the cake pan. Decorate with chocolate ganache and fresh strawberries. Serve and enjoy! Guten Appetit!
